Physics of the Everyday – Making Chocolate Tasty

Join Professor Rob Morris to explore how physics is being used to make sure we only eat the tastiest chocolate. Why does chocolate taste so good, how can experiments help us understand the composition and tastiness of chocolate, and is there even such a thing as bad chocolate!? The Physics of the Everyday series aims to introduce the fundamental physics behind everyday things we take for granted in an accessible, fun, and interactive way. Each short talk will be accompanied by a demonstration and investigation, as well as an opportunity for conversation and discussion. As this event may include the tasting of chocolate and chocolate related products, advanced notice of dietary requirements is needed.

Technological breakthroughs in the energy transition hinge on finding earth‐abundant materials that can convert between electricity and chemical bond energy at a faster rate for a prolonged lifetime. This mission can only be accomplished with a fundamental understanding of the solid/liquid interfaces, also known as the electrical double layer (EDL), at which most important conversion processes occur. However, we are struggling with precise measurement and high‐fidelity modeling of basic thermodynamic quantities, notably the capacitance, entropy and surface stress, of EDL. It is thus imperative to bring together scientists with a wide range of expertise in experiments (single‐crystal preparation and characterization, electrochemical impedance, microcalorimetry, etc) and theory (continuum theory, molecular dynamics simulation, density functional theory, machine learning potentials) to discuss these specific topics in a level of depth greater than that in regular scientific meetings and conferences.

This session will be led by soft matter physicist Dr Kyle Baldwin to focus on the stable foams that often accompany beer as “head”. Why are beers foamy in the first place, how do the bubbles behave (or misbehave) in the glass, and why is this froth so important? The Physics of the Everyday series aims to introduce the fundamental physics behind everyday things we take for granted in an accessible, fun, and interactive way. Each short talk will be accompanied by a demonstration and investigation, as well as an opportunity for conversation and discussion.
